Do I need any kind of voltage converter with my MacBook Pro or do I just need a plug adapter? I'm buying a computer for my father to use in South Korea - should I wait to buy it there or is it the same as buying one in America and switching out the plug?

Just a plug adapter. The Mac's power adapter can handle any voltage between 100 and 240 volts which covers 99% of the earth's power supplies including South Korea.

Your Macbook (and actually all Apple devices made in the last ten years) is able to handle dual voltage, so you will pretty much be able to charge it anywhere on Earth. Don't worry; your computer won't blow up (nor will your iPhone or Airpods).
Most US travelers just ADD a plug adapter that has Korea pins and US slots.
The small adapters direct from power supply to Korea pins can be hard to find.
The Apple store can sell you the appropriate local "extension cord".
