Is there a way to not save a numbers or pages doc.

Whenever I close the documents it always saves. Is there a way for this not to happen, or to be asked if you want to save.

There is that possibility, but it is not granular. It is applied systemwide.

In System Settings->Desktop & Dock, under Windows & Apps, there is

"Ask to keep changes when closing documents".

If you check it, then apps will behave as I think you want - not saving unless you tell them to.

If you have manually saved a Pages or Numbers document just once, then autosave is on, and the document will be saved about every 10 seconds with content changes, on quit, or clicking the red document traffic light to close the document. If autosave wrote the changes just before you exited the appklication, there will be no challenge to save your work.

If you have never saved that document, then by default, Pages or Numbers will throw a dialog:

where choosing Delete throws the unsaved content away and quits the application. Probably not what you want…

You can disable autosave, after the first manual save with System Settings > Desktop & Dock > Ask to keep changes when closing documents [=⦿], and any attempt to quit or close the application will pose another dialog:

Where Revert Changes saves only the content that was last saved and all content in the unsaved document buffer is lost.

Tested: Pages v13 on macOS 13.4.
