Your Apple Watch will use the same Apple ID that the iPhone it's paired with is using. If you want to change the Apple ID you're using on the devices, go to Settings > name at the top > Sign Out at the bottom of the page on the iPhone. Then once the current account is removed, sign into the new Apple ID you want to use on the iPhone/Apple Watch.
