Only able to see pdf files when uploading to any website

This issue just started in the last couple months. I can't say it is directly associated with any particular update and it happens with Chrome as well as Safari.

I upload to many websites, DropBox, Quickbooks Online, Monday.com, etc and I have always been able to see all files on my computer, whether it be a .pdf, .doc, .xls, .jpg, etc. Now, when I hit an upload button, I can only see pdfs available. I have been able to work around this by drag and drop, but not always. I am having to convert everything to a pdf which in some cases I don't want to do because the end user cant edit in that case.

I've tried resetting the Full Disk Access and Files and Folders in System Preferences but it did not change anything.

Has anyone else had this issue or does anyone have any other suggestions to fix?
