The article on Apple Support does not help, as there is no button called "Delete eSIM"
How do I remove the deactivated eSIM card?
Remove Data plan will remove the eSIM. If you want to add eSIM again then you need to contact the Carrier (There is no undo action here).
If it is an eSIM, Remove the data plan. If it is a physical SIM card, Contact yor Carrier. For better clarity watch the GIF below

However the option you describe is not avaiable on my phone (14 Pro, iOS 16.4.1(a))
Maybe because it was not only a dataplan but a normal eSIM with phone capability?
