More of an answer. Services does it swell. System Settings>Services>Text>Word Services. four variations on date/time. May only be useful to those with MS Word or Office, I'm not sure. I've always had Office installed.

My mistake, I left out the Keyboard step: You start at System Settings (not from Notes)>Keyboard>Keyboard Shortcuts>Text
Alternately, clicking on the "Service Settings" in Notes will take you there as well.
