when I delete emails on my iPhone they do not get synced on my IPad or Gmail. I tried already a few things like Fetch under email settings but it is still not working. Sent items do sync which is bizarre

Based on what you've shared your Gmail account may not be set up as expected! Check your set up by following the details listed below. If automatic does not work, try setting up manually: Add an email account to your iPhone, iPad, or iPod touch - Apple Support
If you set up manually be sure to select IMAP. Once you're done there you should be able to delete emails as expected: Delete emails on your iPhone or iPad - Apple Support

Thanks for the update. Given that Gmail accounts are preconfigured IMAP accounts, anything you do on them should sync with the email server in order to provide a consistent experience across your devices. Instead of visiting an Apple Store, who would be better able to assist with hardware issues than an issue such as this, we'd suggest working with Google support from here if the issue is isolated to your Gmail account and it not syncing as expected across your devices despite being set up to do so.
