Apple Watch pairing

I had my Apple Watch set up to my iPhone 11 and didn’t realise I had to unpair it , long story short I sold the IPhone 11 and have a iPhone 13 now the last year and cannot pair my Apple Watch to it, it’s really frustrating me because I can’t use something I paid good money for. If anyone has any idea how to solve this please let me know , thanks.
