An AppleID is normally an e-mail address.
The default e-mail is what’s used when initially setting-up the AppleID.
This simplifies matters for “most” users.
However it does NOT have to be your primary e-mail address; it can be virtually any e-mail address which you desire to use and over which you exercise control.
There are certainly some security benefits derived by NOT having your AppleID in “general circulation.”
