Photos does not update the progress indicator regularly. Just be patient and keep your Mac up dan running while you are not using it at night.
If you thing the upload has been stuck, try to restart the backgound processes in Photos by logging off your user account and logging in again, then restart Photos.
It will depend on the size of your Photos Library how long the upload into iCloud Photos will take. For my Library with roughly 50000 photos and videos it took more than ten days. It is not just an upload. Photos is merging the new items into your existing Photos Library in iCloud and resolving conflicts between duplicate items uploaded from other devices in different albums. And typically the progress indicator will sudddenly jump from 5% to 100%.
