why does the camera on iPhone take multiple pictures when I press the button once?

From the description, it sounds like you're encountering Burst mode. It's described at Capture action shots with Burst mode on your iPhone camera - Apple Support


Use Burst mode with Camera  to capture a moving subject, or when you want to take multiple high-speed photos so that you have a range of photos to choose from. You can take Burst photos with the rear and front-facing cameras.


This happens if you hold your finger on the shutter. So you might be lingering just a touch too long and it registers as a burst instead.
