From the description, it sounds like you're encountering Burst mode. It's described at Capture action shots with Burst mode on your iPhone camera - Apple Support
Use Burst mode with Camerato capture a moving subject, or when you want to take multiple high-speed photos so that you have a range of photos to choose from. You can take Burst photos with the rear and front-facing cameras.
This happens if you hold your finger on the shutter. So you might be lingering just a touch too long and it registers as a burst instead.

ShannonM1 suggested one possibility. The other is HDR, which quickly takes several shots, then integrates them into a single image, choosing the best from each image.
I am considering looking at this as being the reason for duplicate shots. Thanks!
