Its really frustrating ESPECIALLY when you give us these "Work", "Home", "Important" have no colours BUT you give us the option of colouring them EXCEPT we have to choose the exact same colours that are already used in tags. I don't quite understand why.

There are far more colours than 10 shades of red.
Even a colour wheel has more colours than Apple tags does. A child's basic colouring pencil set has at least 12 colours! "in the old days" it used to come up with a color picker and you could just make up your own... must take too many software designers to change that lightbulb.
No one here can answer why Apple does something questions.
Just to add, personally I don't think I could distinguish 10 different shades of red assigned to Tags.
