Printer issues for 2 HP printers & Epson printer

Why are both the Option and Utility tabs both missing in my printer settings? This is the case for all my printers. I have an HP Photo printer, a HP Office Jet Pro & an Epson. 3 Printers total - Same issue.

How do I fix this? I need to be able to change these settings for my photography and sublimation printing.

I have troubleshooted by:

uninstalling, deleting and restarting Mac Book and then reinstalling.

I have the correct drivers

Both my Mac Book and the printer's drivers are all up to date.
