Good morning and sorry for the inconvenience, I was wondering if it is possible
to change the names of the worksheets both as a font and as a color by changing
them from gray to different colors, thanks.

You can send feedback to Apple. In Numbers, Menu > Numbers > Provide Numbers Feedback.
Choose Feedback Type > Feature Request.
Explain how changing font and/or colour of the sheet names will enhance users' experience with Numbers.
You may not get a reply from Apple, but we are assured that the development team does read feedback.
