Need to erase my information from old apple watch since I have a new one.

Apple Watch Series 8, watchOS 9

Then remove the Apple Watch from your account, see -> Check your Apple ID device list to see where you're signed in -> Check your Apple ID device list to find where you're signed in - Apple Support
