How do I log out of my Apple ID on my watch to log into a new one

Go to Settings > [Your name] on your iPhone and scroll down. You should see a list of all of your devices, in which your current Apple Watch is listed. Tap on the name of it and you should be able to "Remove device".
You can pair a new Watch in the "Watch" app on your iPhone, even if you already have one paired. Go to Watch > All Watches and tap "Add Watch". You can then begin to set up your new Watch. Let me know how you get on!
