You have asked us to guess everything about your specific situation.
Not only don’t we know where these calendars might be housed, or how you present the invitations (emails, shared calendars, etc.), we don’t even know what happens when you try.

I have an iPhone 12 with the most current OS. I recently noticed I can no longer invite people to my appointments when I schedule a new event in the calendar app that come standard with the OS.
I used to to have a section in an event that allowed for invitees, I no longer have that section.
I have closed the calendar app and turned my phone off. Neither step resolved my issue.
Under calendar settings I turned off show declines to invitations years ago. It is still a setting I can turn on and off even though I can not invite anyone to an event.
What might appear below “Travel Time”? Where are your calendars housed?
