How do I get the ALL the keys on my Logitech K750 Wireless Solar Keyboard
to work with my new Mac Mini? I have the Mac set up with a new Samsung M8 monitor. I can control the sound or the brightness from the keyboard.

Get the app "Monitor Control" Then you can get the keys to work.
This is not a problem with your keyboard. It is a limitation with how MacOS controls (or can't) non-Apple peripherals, in your case, a Samsung monitor.
I am using a Magic Keyboard but I still can't get it to adjust the brightness of my non-Apple screen. Although, I am able to turn up or down the sound volume.
