Am I able to get a subscription back for the certain amount of days I was gonna get becuse I refunded Apple Arcade when I shouldn’t have.

No. While some trial subscriptions will continue to operate for the extent of the trial period even after cancelling the pending subscription renewal Apple make it clear that if you cancel Apple Arcade during your trial you will lose the service with immediate effect. Once the trial period is over any refund request granted would also trigger immediate loss of service.
