Game Center/Apple ID
If I give someone access to my Game Center do they also have access to everything else connected to my Apple ID?

Someone can correct me if I'm wrong, but I don't think you can "share" your Game Center without sharing your Apple ID. Therefore, yes if you share your Apple ID credentials they will also have access to everything else connected to your Apple ID. Everyone should have their own Apple ID.
Game Center does allow you to connect and play with friends without sharing your Apple ID.
