Should I use AIDente?
Should I use AIDente? Optimised charging doesn’t work as I want, it charges almost always to 100%.

What is AlDente
It's an application that lets you limit battery charging on Mac notebooks. Supposedly "Keeping your battery at 100% most of the time will significantly shorten the lifespan of your MacBook battery" and the limiting is a way to prevent this.
Then it's learned your habits and is charging to 100% just like it's designed to do. You're way overthinking this.
"Supposedly?" Where did your get the quote and was it an Apple source or some outfit who is vested in promoting useless apps via "scare" tactics?
Doesn’t stop the charging at 80% usually.
What is AlDente and why do you think optimized charging is not working? It not working as you want it to is not necessarily something to fret about.
It's best to let the battery circuitry take care of itself as it's been designed. "Tinking" with it will likely bring nothing new to the table.
Use the built in battery management system. It does work.

Overcharging can degrade the battery life over time, so it's important that any charging optimization tool you use respects your set limits.
