cannot set passcode on either my iPhone 12 Pro Max, 16.5 or on my Apple Watch SE WatchOS 9.5.1 for my watch, it is not selectable on either. Talked with support yesterday and we re paired, it allowed me to perform but when watched finished and was ready to use, no passcode and back to same as before

iPhone screen time also controls watch restrictions. Did you do what I suggested in screen time in the phone?
Does not help, thought i made it clear i am trying to put passcode on my Apple Watch SE, WatchOS 9.5.1, the option to turn passcode on is unselectable both on Watch and IPhone 12 Pro Max watch app. Only wrist detection is actionable.
