Why my old address when trying to do application for Apple Card

If you are applying on an iPhone, I believe this would likely autofill from the Shipping Address you have selected for your Wallet Settings. Open your Setting App > Wallet & Apple Pay > Scroll to the Transaction Defaults section. Here you will see a Shipping Address section where you can select a default address and add a new one.
I believe this feeds from the Billing Addresses for the cards you have added to The Wallet App. Each card has a Billing Address section that you would see the addresses you have added. Those addresses likely feed from the financial institution who issued your cards to you from the address they have on file for you.
Another area that this could be from would be the shipping or billing address of your Apple ID payment methods.
