I followed a video to change some settings on my Iphone 12 so it couldn't be accessed if stolen. I am trying to add a work email account on my phone but can't access my apple id or email accounts. Anybody have any idea how I can do this now?

Tap Settings > Screen Time > Content & Privacy > scroll to Allow Changes.
