If you're only seeing black and white on your Apple Watch, you may have "Grayscale" enabled in Settings > Accessibility.
You can find more info about that and other accessibility features here: Use Accessibility features on your Apple Watch - Apple Support
Try checking that and if it's on, disable it and see if that does the trick.
