Thank you!! I’d lost the wonderful birds chirping to wake up to. Now I see it isn’t under the regular “Alarms” feature, but instead under the “Sleep Schedule” app. It’s a blue app, and the icon is a graphic of a little bed. I now set my morning alarm there, and no longer under the “Alarms” app, and the birds songs are back. It’s the best way to wake up!

I think you might be misinterpreting how this function works. The Bells or Birds option is part of Chimes, and the description says "When this is On, selected sounds and haptics will play on the hour". In other words, it looks like this is not part of the Alarm function for Apple Watch.
OK, I have now heard the Bird sound as an on-hour chime. It is one little twitter. there is no way this makes there OP's description of "a wonderful variety of bird sounds" so I suspect the Birds alarm and wakeup is something different. I suspect the required sound will be in the Wake-Up app which is sort of balanced between Clock (Alarms) and health/sleep.
On the iPhone, open Clock and on the Alarm page look at the Wake Up function. Hit Change and scroll down to Sounds & Haptics, where one of the options is Birdsong.
Unfortunately I don't think this choice of sound file is mirrored to Apple Watch.
Okay: What I finally found is this: The ‘birds’ alarm can be set for wake-up in your Sleep schedule.
Clear all alarms. Ensure your Chimes is set to birds not bells. Go to your Sleep schedule, and set up
your bedtime and wake time. Note you can set different times for weekday and weekends. Restart your watch.
FYI this worked for me. I now wake up to birds. Note this alarm is not a simple chirp, rather a variety of birds, including some actual bird calls that are a bit strange. It’s nice.
Dah-veed, on your watch, go to Settings/Clock/Chimes, touch Chimes, and it should give you a choice of Bells or Birds. Choose one. I have done that repeatedly, and it is mostly successful. But not if I turn off the sound on my iPhone and turn it back. Goes back to Bells.
There is no indication there that the bells or birds will be used for anything other than the hourly chime.
Certainly, nothing that would leave me to believe that it is associated with an alarm sound.
I'm not aware of any option that allows the user to choose the sound used for an alarm on the Watch.

Are you confusing "Alarm" with the Sleep Schedule wake-up sound?
I just got the regular watch wakeup chime this morning. I have never had anything different.
I still think the Clock/Chimes settings are for chiming on the hour rather than wakeup alarms. I can test this more in about 20 minutes when the hour rolls over.
Gee, I have been waking up to the delightful sound of Birds for six months on my Apple Watch. If you set your weekday schedule or weekend schedule or both, you will have that wonderful alarm.
Each and every time I turn my iPhone sound off, when I turn it back on, the Chimes are now a Bell instead of Birds. I have been successful at repairing the watch, but not this time.
I must admit I had never found that option until your question. I'll check it out on my watch and see if I get any different results tomorrow morning.

My comment on how to set this up is for Apple Watch only, not iPhone.
