Can you edit child birthdate in Apple Pay? I hit wrong year when setting her account up

Yes, age is associated with her Apple ID. Please use the steps in the support article linked below to correct her Apple ID age.

Once here Apple ID information is updated, she may need to force restart her iPhone>
