I need to pair my watch with a new phone - the old phone is gone so I can't unpair it and my new phone can't find it. What can I do to get my watch paired with the new phone?

How do I unpair my Apple Watch from an old phone and pair it with a new phone? I switched carriers last night and have a new phone so I need to unpaired my watch from the old phone and pair it with my new phone. The information I found online told me to go to my watch on the iPhone and do it that way, but it’s not allowing me to.
