My mom has always been pretty nosy and enjoys taking a look at other peoples things without permission, and I’m starting to think that she’s monitoring my iPhone. Is there any way I can either disable it or even check to see if she is in the first place?

Make up some complete and utter rubbish lies. Lies so juicy that they just have to be shared. If any of those lies appear in future conversations, you'll have your answer. (Just make sure those lies are trivially disprovable; not things that'll get you tossed out of the house, arrested, or worse.)
Pragmatically, you'll probably have to put up with this snooping until you can legally move out, place your devices under your own name, and go no contact.
