I’ve tried using a usb-c to display port adapter and cable to use my MacBook Pro as a second display for my iMac but the display settings aren’t allowing me to change this. Is there a way to do this? A different connection maybe?

That won't work.
Even if your MacBook Pro had a Mini DisplayPort or a Thunderbolt 1/2 port, that would be for video output, not for video input.
It's very unlikely that you could use the iMac as a Target Display Mode display for the MacBook Pro.
The requirements for Target Display Mode are extremely restrictive, and I believe there are only a few MacBook Pros that are new enough to have USB-C ports, and also old enough to satisfy the "must have been introduced in 2019 or earlier and have macOS Catalina or earlier installed" restriction.

So it sounds like there is no option for the two since MacBook Pro only has usb-c ports and no display port. I think the iMac has a display port but I’d rather be using my iMac as the main screen.
