I just bought an Apple Watch and it had to update so I waited then it was pretty much at 99 percent and said new update available and I’m getting ****** off becuase now it doesn’t even want to update

There is a very important clue in your screenshot. "You can resume the download when you are connected to a Wi-Fi network". The install will remain paused until Wi-Fi is available again.
The WiFi requirement is likely to be for your iPhone rather than the watch, but make sure they are both able to connect to your router.
Do you by chance use a VPN on your iPhone? If yes, don't just turn it off, get rid of permanently. iPhone does NOT need VPN or anti-virus software, which often causes all sorts of issues.
Get rid of the VPN. Tell your father they cause issues with iPhone and aren't necessary at all.

That is one of the messages I get or when it’s at 99% give or take it says “ new update available and it cancels my update
And yes I watched that vid before I posted, I’m about to go mental if the update fails again or someone says something I already know
I’ll try, it’s not me who made the vpn permanent, it was my father and questodio
Well I did manage to get rid of it and it keeps on doing it but saying a new update is available for you Apple Watch and it cancels my update
I did, and now it says new update available when it’s at 85% done or so
