This number is in my contacts. There are 3 telephone numbers associated with the persons name. The name shows up at the top, NOT any phone number. I am trying to determine the number that texted me so I can use the correct one for other purposes.

My iPhone does not show these numbers. I have an iPhone 15 with the latest operating system. When I look at the text string, there is no phone number at the top. If I hold down on the text message, I get many options. None of them provide the phone number the text came from.
If this person is in your Contacts, then tap on the name at the top of the page, then on that next page, tap on Info. That will open the person's contact card. Scroll down to the number area and RECENT will appear above the number used.
It's when it's a known sender that it's an issue.
There might be multiple numbers within an organization, or other times for some reason sometimes texts from an individual will come from his phone number and some will come from iCloud. If they're all in the contact card, iMessage doesn't distinguish. It's important because it'll reply to whatever the last number was, and that could be iCloud or a phone number that sends automated messages and isn't set up to receive replies.
It would be up to them whether or not they use their phone number or Apple ID email address to send iMessages. That is not something that you can change.
It will be displayed at the top of the page the text appears on, and also prominently in the list view of messages.
Thank you.
Drifty: why would texts from a known sender's iPhone suddenly start coming from their iCloud account rather than from their phone number? That's what I was trying to narrow down with this query. I had to add the iCloud account to their contact card to integrate the text threads. They were traveling at the time, but now that they're home, the texts are still coming from their iCloud account.
Which app are you using?
With Apple Messages, the text message either came from a known sender (and that’s shown), or Messages shows the sending number.
SMS sending numbers can be spoofed.
Forgot my phone number but I know my iCloud
