do not see note list after launching notes

Go up to Notes Menu > View > Show Folders. You can also change the list of notes in the right panel by choosing between Notes Menu > View > As List or As Gallery.

If you first choose View 'Show Folders' then click on any of the Folders (Except Quick Notes), you will see the option to change from 'As List' or 'As Gallery'.

This further complicates the matter and requires another question

Is the Notes Application ONLY associated with and using iCloud to sync you notes ?

Add or remove accounts in Notes on Mac

If you keep notes in internet accounts—for example, iCloud, Google, Yahoo, or AOL—you can add those accounts to Notes on your Mac.

You may also have a Managed Apple ID account from your school or business that allows you to keep notes. 

Note: You don’t need an internet account to use Notes. You can store notes only on your Mac, but these notes won’t appear on your other devices.

Add an account

For information about using iCloud with Notes, see About using iCloud Notes. To add other types of accounts, follow these steps.

1. In the Notes app  on your Mac, choose Notes > Accounts, then click Add Account.
2. Select your account type.
3. If you don’t see your account type, click Add Other Account, then select the account. 
4. Follow the onscreen instructions to enter your account information and sign in.
5. Make sure the Notes checkbox is selected for the account.

Each account you add is listed separately.

Be sure to set up your iPhone, iPad, and iPod touch to use the same notes accounts, so that your notes stay up to date across all your Apple devices. See the “Set up and get started” section of the user guide for iPhone, iPad, or iPod touch. For a device that doesn’t use the latest iOS or iPadOS version, get the user guide from the Apple Support Manuals website.

Temporarily stop using an account



1. In the Notes app  on your Mac, choose Notes > Accounts.
2. Select the account, then turn off Notes.
3. The account’s notes aren’t available while Notes is turned off.
4. To view notes from the account again, turn on Notes.

Remove an account

1. In the Notes app  on your Mac, choose Notes > Accounts.
2. Select the account, then click Delete Account.
3. When you remove an account, the account’s notes are deleted and no longer available on that Mac. Copies of the notes remain in your internet account (for example, iCloud.com or Yahoo) and any other devices you had already set up.

It's not greyed out. Hide Folders is listed because Show Folders is already selected.

Also, I do not have the three icons

You don't see three icons because PP moved one of the ones on the right to the left.

Ah, the old Third Party Association issue when mixed into Apple macOS

Best I stay silent on this as I do not Mix " Apples with Oranges " for that very reason they do not always play well with each other

Perhaps another Contributor(s) with experience using Google in Notes and can offer some insights
