1. Open Settings
2. Tap Your Name

The default card should show here

1. Tap on Payment & Shipping
2. Add payment methods needed with Add Payment Method button
3. Tap Edit
4. Rearrange the cards as needed.

The car that appears at the top of this list is the default payment method and will be used for all purchases and subscriptions.

You can change the order in which payment methods are tried (using the grip icon on the right). The top listed one is tried first. Apple account balance is always used up first.

There is no distinction in payment method by service. All digital services are treated the same for this. But if you know the date, then some influence can be used that way manually.
