Hello springtowntexas,
This is not a supported feature of iOS or macOS. There is sort of workaround for iOS, but I'm not sure how to do this in macOS.
In iOS, within the Shortcuts app, you can create a Personal Automation that basically runs every time the Messages app is opened. The only action would be Lock Screen. Once you unlock the iPhone (Face ID or Passcode) the Messages app would open up. Obviously this wouldn't work if the person who has your iPhone knows your passcode.
This is the first step. You only want to do this when the app Is Opened. You can select multiple apps as well, but lets just use Messages.
Next, just add the Lock the screen action!
Finally, just make sure Ask Before Running is turned off.
Now whenever you open the Messages app, it will lock the iPhone. You will need to unlock the iPhone before getting access to the Messages app.
I know this wasn't the solution you were looking for, but I hope it turns out to be a nice workaround!
