Might you know to use the shortcut share sheet and change default @icloud email address being used? I would expect this to work but it does not change outgoing / default send from email address.

The from address auto-selection is based on where you are choosing the new mail option. See the pic below which is self-explanatory. This is valid for iPad and iPhones too.
Maggew ~ It appears that although a "From" email address can be specified in the Send Email action, it must be one of your Apple email addresses registered to your Apple ID – not, for example, a Yahoo! Mail address.
And using one of your Apple email addresses in that Send Email action won't make it the default "From" address for future emails.
