Subscription not showing on Apple Pay
I paid for a monthly subscription on a radio website through Apple Pay. I wanted to cancel the subscription, but it is not showing up under my subscriptions in my settings.

Subscriptions that show up under >Settings< is for subscriptions for apps or services etc. that you purchase on the Apple website, App Store, Apple TV etc.
It sounds like you purchased your subscription directly from the radio station website. You’ll need to contact the radio station to cancel your subscription. They’ll continue to bill you otherwise.
