What if you don’t know the original password or passcode that you set up the Apple watch with?

how do you reset or repair it then?

See these articles, which assumes you are indeed the owner who set up the passwords/passcodes to begin with. If you are not the person who set up the passwords, you can't bypass them unless you can present the original purchase receipt to Apple with the watches serial number printed on it, proving you're the original owner. In other words, if you by chance bought a used Apple Watch, the only person who can unlock the watch, is the person who locked the watch to begin with. Apple won't help in a situation like that.
