In applications, unless the vendor (or Apple) has a choice in the app settings to do that, you can't.
Unlike Windows, the Mac has never had a resolution independent interface, where everything in an app, and the entire GUI, moves to make room for the font and point size you choose.
The closest you can get is leroydouglas mentioned. But that's everything. Screen resolution and app size. Windows has always had the advantage there where you can increase point size of text throughout the GUI and still stay at a 4K resolution, or whatever you're using.
Geez. I didn't know that. Now I'll have to check my ASUS laptop or Windows 11 VM.
