How do I remove a name from a group text. Iphone 12

If there is anyone in the group text who is using SMS or MMS you cannot add or remove anyone from the group. The only option is to create a new group without the name you want to remove. This is a limitation of the SMS/MMS standard, and has nothing to do with Apple.
