need iTunes compatible to MACos big sur

Using macOS Catalina or later versions (Big Sur included) you don't have iTunes anylonger on your Mac.

Use Finder instead, as per these instructions:

Use the Finder to sync your iPhone, iPad, or iPod touch with your Mac

and/or How to back up your iPhone, iPad, and iPod touch with your Mac

and/or Restore your iPhone, iPad, or iPod touch from a backup (section "Restore your device from a backup on your computer"
