You'll need to discuss that change with Apple Developer Support.
Whether that is transferring the app from your existing developer Apple ID to a newly-created Apple ID with the preferred name, or changing your current developer Apple ID to the new name?
You will likely need to acquire a DUNS number or equivalent detail for the new organizational legal name, as well.
