Our air tag loses connection as soon as it leaves house. Should it not tap into the Find My network? Do I need to do anything else to enable me

to track?

Anytime a device is within about 30 feet, it determines its location from that device and updates. Without a device close by, it cannot update its location. FindMy will show the time of the last location it has captured. It uses Bluetooth for the connection, the same as other personal device trackers. With so many phones out there, you would be surprised how well it can be used to track the location and is not "lost" very often.
