I'm trying to order a new macbook air, but there's no option for me to chose a keyboard of choice. I'm from taiwan but i would prefer a simple English keyboard instead of a chinese keyboard.

I'd suggest contacting Apple and asking them about it. Though if the Apple Store isn't offering you a choice of keyboard layouts, that probably means there isn't a choice for Mac laptops sold in your country or region.
There's a link on the Apple Store page for shopping help. (At least on the U.S. version, and hopefully on yours.)
In the Apple online store, I see 5 keyboards are offered when you click on that item, as shown below. Isn't the 2nd one on the list what you want??
