I’m trying to use my Mac connected to a projector by HDMI. The projector isn’t working but I set the HDMI output to main monitor and now every time I plug in the hdmi cord the screen goes to a blank page and I cannot access the settings menu to switch it back.

Try Mirroring the Screen with the Keyboard:
Command-BrightnessDown toggles the sense of [√] Mirror displays, and allows each Mac to have its own resolution and separate pictures again.

Command-BrightnessDown (the shortcut The Littles proposed, but they broke out the two cases for your convenience) can be applied even if the screen is bonkers.
The Arrangement pane screen posted afterward is "the long way" and helps illustrate the idea of Extended Desktop, which is what you will be switching TO.
The problem is, I can’t access any of the settings menus while the hdmi is plugged in. It immediately goes to the screen saver.
