How can I update iwatch 1st generation with iPhone11

You need to just plug it in to the charger and click update. The iPhone needs to be beside it until the update finishes. Lease see this:Update Apple Watch software - Apple Support

What version is it on now?

The most you can update an Apple Watch Series 1 to is 6.3.
