How do I get Apple to take out funds for each charge rather than in bulk

You'll need to keep track of what you spent, then, I can tell you that charges hit my AMEX within minutes of my buying something. Are you using a debit card?

No, they don't send a bill. The send receipts once the charge goest through.

Purchase made using Apple ID Account are processed by date and not individual items. It would be like going to the grocery store and want each item rung up and charged separately. Apple does send a email with the items purchased, subscriptions paid, etc.
