Verizon keeps message content for 240 hours. After that, they will still have records of the date and time of the SMS messages (not iMessages) and the numbers they were sent from/to. But they do not have the content. If Verizon receives a subpoena, they will provide that information. But, you can also get that yourself by logging into your account and looking at your detailed billing.
If you mean "you see that all the time" on television, that is simply a plot device and has little to do with real life.
