How do you know you have no backups?
Where are you looking for them exactly?
You won't see any OS versions for the backups anywhere.
You will only have access to the backups when you are setting up the iPhone after restoring it.
If you have a backup made before installing iOS 17, it should be there and let you use it to set up the iPhone again, unless iOS 17 replaced it with its own backup at some point.
