I have no idea if there exists a French version. But if you'd post exactly what you need to learn, this is an English community, that would help greatly, i.e. exactly what do you not know how to do? Add an account? Create an email? Actually all that's in the links I've provided.
The "hardest" thing to do in my opinion is creating accounts. That's because you have to be perfectly precise in entering the data points. Those come from the webmail services you wish to add.
It's all very user friendly. If you open the mail app, you see the icons for doing all the tasks. If you don't understand what each one means, click them all and find out. You can then just close the panel and try another one. Sometimes discovery is the best teacher.
